In this episode Lauren Toyota makes a pineapple fried “rice” but with quinoa due to it’s quicker cooking time and throws in red and green bell peppers, red onion, toasted cashews, cremini mushrooms, chili flakes, chili powder, mint, cilantro, lime zest, and a sauce made from tamari, a pineapple jackfruit jam, and rice vinegar.
