Fancy easy, cheesy, vegan quesadillas? Then you’ll love this recipe! Our quesadillas are packed full of flavour and are easy to make.
These quesadillas are effortless, delicious and super cheap. Simply cook the filling ingredients together in a pan, add them to your tortilla along with some vegan cheese, fold over the tortilla and wait for the cheese to melt. We used black beans, sweet corn and kidney beans for our filling but feel free to switch this up to suit your tastes for your own quesadilla!
Cut them into little triangles and serve with guac and salsa. They’re incredibly moreish so try not to eat too many! These are great to have as party food or part of a Mexican feast with nachos, tacos or burritos. Delicious!
